Under controlled temperature and humidity conditions, the tea leaves are evenly spread out, allowing moisture to evaporate and enzyme activity to increase. Tossing is an important step in the processing of oolong tea and directly affects the quality of the tea. After withering, the tea leaves are placed in bamboo sieves and tossed, allowing the leaves to relax and spread out.
