Our Emei Maofeng tea is meticulously crafted using traditional methods. The tea leaves are hand-picked from the high-altitude tea gardens of Emei Mountain, ensuring the highest quality and flavor. By using high temperatures to inhibit fermentation and the enzymatic oxidation of substances such as tea polyphenols, fixation preserves the inherent green color of the tea leaves while reducing their moisture content and softening them in the process.
The process involves applying external force to break and lighten the tea leaves, rolling them into strips and reducing their volume while disrupting their structure. Additionally, some tea juices are extruded and adhere to the surface of the leaves, significantly enhancing the tea's flavor intensity.
Drying is the final step in the initial processing of tea leaves. It involves evaporating excess moisture, deactivating enzyme activity, and halting enzymatic oxidation. This process also promotes thermochemical reactions within the tea leaves, enhancing their aroma and flavor.
